Here I have prepared a colourful Red Hibiscus (Chembaruthi) Squash. Red Hibiscus is known as Chembaruthi (செம்பருத்தி )in Tamil. In south India, these flowers can be seen in almost every home.


Ingredients for 2 liter:
§  Red Hibiscus –  100 nos
§  Sugar – 1 kg
§  Water – 2 cup
§  Lemon Juice – 1cup

Instructions:
v Wash the flowers, remove petals with center parts and keep; discard the green parts .Use only petals with center parts.

v Put Hibiscus, in a juicer and extract juice .Ensure that hibiscus are beaten to pulp if needed add water to grind it.
v Do NOT filter the juice .
v In deep heavy pan I normally use cooker, pour remaining  water and add sugar.
v  Heat till the sugar gets dissolved stir in between.
v  Once sugar gets dissolved , boil till this reaches  thick consistency.
v  Now add both lemon and Hibiscus juices and boil it in low flame till it reaches jam consistency stir in between.
v  Once it becomes thick it will  form a foamy reddish  bubbles..
v  Switch off the  gas and allow it to cool don’t cover it with lid while its hot.
v  Once it completely cool transfer it to bottle and store.
v   you can refrigerate and use it for more than a year.
v  Now Red Hibiscus (Chembaruthi) Squash is ready for use.



v  While serving, add one or two spoons with 1 cup of water (ratio can be adjusted to suit your need); Serve chilled.
